Why Crisps Come in a Bag of Air

Open a bag of crisps and the empty space can feel like an accusation.

There is a proper term for unused space in packaging — slack fill — but a crisp bag is not simply padded to look generous. The gas above the crisps, the film around them and the seal at the top are all part of the preservation system. The exact amount varies by brand, product and pack size.

Oxygen is bad company for fried food

A crisp is a thin piece of starch cooked in fat. Over time, oxygen reacts with that fat and contributes to rancid, cardboard-like flavours. Moisture causes a different problem: it softens the structure that makes a crisp crisp.

Many manufacturers reduce the oxygen inside a sealed packet by flushing it with food-grade nitrogen. Nitrogen is already the largest part of the air around us and is relatively unreactive in this use. Lowering the oxygen concentration can slow oxidation and help protect flavour during storage.

That does not mean every puffed bag contains exactly the same gas mixture, or that nitrogen alone explains its entire shelf life. The oil, the seal, the residual oxygen, the temperature and the packaging material all matter.

The cushion is real too

Headspace gives fragile crisps some room to move when bags are packed into cartons, stacked and transported. It is not an invisible crash helmet — plenty still break — but a tightly vacuum-packed bag would deliver a much less convincing product.

So the space does two jobs: it allows a protective atmosphere and provides some cushioning. It can still be reasonable to dislike an undersized portion. Portion value and packaging function are separate questions.

The bag is usually more than one material

Snack packaging varies, but many crisp bags use laminated films: an outer layer that can be printed, a sealable inner layer and, in some designs, a metallised barrier that reduces the passage of light, oxygen and moisture.

Those layers are excellent at keeping the outside world away from the food. They are also difficult to separate after use, which is why recycling them remains awkward. Some collection schemes and newer mono-material packs are improving the picture, but a glossy recycling claim deserves the same scrutiny as any other claim on the front.

What about the little sachets?

Desiccants and oxygen absorbers appear in some packaged foods, but they are not standard passengers in every bag of crisps.

  • Desiccants absorb moisture.
  • Oxygen absorbers remove some of the oxygen left in a sealed package, often through an iron-based reaction.

If a sachet is present, its printed instruction matters: do not eat it. But do not assume an ordinary crisp packet contains one just because the bag is inflated.

Altitude changes the bag, not the ingredients

A sealed packet may look tighter at higher altitude because the pressure outside the bag has fallen. That can happen on a mountain road or in an aircraft cabin. A taut bag is evidence of a pressure difference, not a reliable travel diary.

Likewise, squeezing a packet cannot tell you its exact gas composition. It only tells you that the seal is holding pressure.


The apparent “air” is not the snack, and it is not a gift from the manufacturer. It is part of the system that lets something fried in one place arrive crisp in another.

You are still allowed to judge whether the number of crisps was worth the price.
